Local Island Beef is sold in Whole, Half or Quarter Sides (includes cut, wrap and freeze).

HALF (approx 333-375 lbs hanging)

QUARTER (approx 150-180lbs. hanging)

Note: Loss from bones, fat, etc., is approximately 30% of carcass weight. Package or take-home weight on a half beef would be approximately 270-320 pounds. To split a half beef, cutting instructions must be identical for equal portions of meat.

 

 
Slaughter in the San Juan Islands is conducted by the Mobile Processing Unit (run by the USDA) and carcasses are delivered to Island Grown Farmers Cooperative  http://www.igfcmeats.com/4.html year-round.
